Microwave Steamed Egg Recipe
Ingredients
- 1-2 Eggs
- Water+some kind of bullion OR liquid stock
- Salt (to taste)
- Scallions, thin sliced (optional)
- Sesame oil (optional)
Instructions
- Whisk the egg(s) with the water/stock in a large bowl. The egg will puff up as it cooks so it needs space to rise. You also want approximately twice as much stock as egg, but you can eyeball this. (I promise if six-year-old me can make this, so can you.)
- Add salt if using, making sure to stir in.
- Wet a paper towel and cover bowl to prevent splashing.
- Microwave for approximately 2 minutes. If egg hasn't solidified, keep cooking for 30 second intervals until set.
- Sprinkle scallions and sesame oil if using.
- The egg will be very hot so consume with care.
Note: If there’s too much liquid, the egg will float to the top and create a layer of egg+layer of broth so it’s a very forgiving recipe.
